Ageing on lees

Bubbles make at last their appearance. At this stage, the law imposes to keep bottles in cellar 15 months minimum for the non-vintage and 3 years for the vintage champagnes.

We consider that prestigious Champagnes and in particular those made out of Chardonnay, need much more time to express and open themselves. That is why we let age our champagnes between 20 and 36 months for our non-vintage and 4 years for our Vintage champagnes.

All bottles are freshly disgorged before being sold.
